Perfect Pumpkin Pie

1 -9 inch unbaked pastry shell
1 -15 ounce can pumpkin
1 -14 oz. can sweetened condensed milk
2 eggs
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

Single Crust for the ambitious
1 1/4 c. flour
1/4 tsp. salt
1/3 c. shortening
4 Tbls ice water

Preheat oven to 425*. Beat pumpkin, milk, eggs, spices and salt. Pour into crust. Bake 15 minutes. Reduce oven to 350* and bake an additional 35-40 minutes. Cool, serve with whipped cream and enjoy!
