Italian Meatballs

1/2 C. seasoned breadcrumbs
2/3 C. milk
1 pound ground beef
1/4 cub finely chopped onion
2 tsp. minced garlic
1 egg
1 tsp. salt
1 tsp pepper
1/4 C. parmesan cheese
1 Tbls. dried parsley

Mix all ingredients, and form 16-18 2" balls.  Place on parchment paper.  Bake for 20 minutes at 400*.

Philly Cheese Steak Skillet -Lean and Green

1 1/2 lbs. steak, cubed
1/2 C. scallions
2 C. red/yellow pepper
1 C. green pepper
1 garlic clove
2 tsp. ginger
1 Tbls. soy sauce
1 Tbsp. Worcestershire sauce
1 Tbls. siracha
3 Tbls. reduced fat ketchup
1 1/2 C. low fat provolone cheese

Brown steak in skillet.  Remove from pan, add onions and peppers (add water as needed) brown, remove and add to beef.  Add garlic, ginger, soy sauce, Worcestershire sauce, siracha, and ketchup.  Simmer 5 minutes.  Add steak and vegetables back to skillet.  Top with cheese.  Place in oven for 5 minutes, turn onto broil and cook additional 3 minutes.  

5 Servings
Each Serving= 1 lean, 1 1/2 green, 3 condiment

Korean Beef and Rice

 2 lbs. ground beef
6 cloves minced garlic
2 Tbls. sesame oil
1 Cup brown sugar
1/2 Cup soy sauce
1/2 tsp ground ginger
salt and pepper
1 tsp. crushed red peppers
cooked rice
1 bunch green onions

Heat a skillet and brown beef with garlic in the sesame oil.  Drain most of the fat and add brown sugar, soy sauce, ginger, salt and pepper and red peppers.  Simmer for a few minutes to blend flavors.  Serve over cooked rice and top with green onions.

Rice Pilaf

 2 C. onion, chopped
2 C. celery, chopped
1/2 C. butter melted
2 C. minute rice
2 Pkg. Lipton chicken noodle soup ix
1/2 tsp. sage
1/2 tsp. thyme
1/2 tsp. salt
4 C. water
2 lbs. hamburger, browned

Saute' onions and celery in melted butter.  Cook over low heat until soft, about 15 minutes. Add rice, soup mix, spices and water.  Stir.  Cook until water i gone, add browned meat and serve

Beef Stroganoff - Dianna Whitmer

1 1/2 lbs. stew meat or hamburger
3 Tbsp. oil
1 1/2 C. thinly sliced onion
1 1/2 tsp salt
1 tsp. dry mustard
1 C. water
1 glove minced garlic
4 oz. can mushrooms
1 t. Worcestershire sauce
2 Tbls. flour
1/4 tsp. pepper
1 tsp. beef boullion
1/2 pint sour cream

Cut meat into small pieces, brown in oil.  add onion, garlic, and cook until onion is clear.  Add mushrooms and cook lightly.  Stir in flour, salt, mustard, pepper.  add bullion, water and worcestershire sauce.  stir to blend.  Cover and cook slowly until meat is tender.  Stir in sour cream.  Serve over hot noodles or rice.

Creamy Ground Beef Enchiladas

2 Pounds ground beef
1/2 tsp. salt
1 7-oz. can green chilies
1 package (1.2 oz) taco seasoning
2 cans cream of chicken soup
16 oz. sour cream
3 cups cheddar or Mexican blend cheese
16 small flour tortillas
1 C. salsa

Preheat oven to 375*.  In skillet brown beef, drain off oils.  Add half the can of green chillies, salt and taco season, cook til all meat is coated.  Meanwhile combine soup, sour cream and remaining chilies.  Lay out tortillas and add equal amounts of meat onto each tortilla, and a handful of cheese per tortilla.  Place half the cream sauce into the bottom of a 9*13 pan.  Fold and place seam side down into the pan the enchiladas.  Top with remaining sauce and than layer with cheese.  Bake for 25 minutes til cheese is melted. Remove from oven and spread the salsa ontop.

Hearty Beef Stew

1 1/2 - 2 lbs. beef chunks
1 onion, chopped
8 medium potatoes, cubed
1 lb. carrots, sliced
1 tsp garlic minced
9 beef bouillon cubes (or 4 tsp. bouillon base)
1/2 tsp. bay leaves
1/4 C. flour
1/4 tsp. garlic salt
2 Tbls. olive oil
salt and pepper to taste
7-9 cups water

Toss chopped meat in flour. Heat oil in large stock pot, transfer meat and brown in hot oil. Place chopped onion, bouillon  bay leaves, garlic salt, minced garlic, and 1/2 tsp. salt and 1/2 tsp. pepper in pot.  add 4 cups water. Bring to boil, reduce heat to one notch above low, and simmer, covered for 1 1/2 hours.  Add potatoes, carrots, and 3 1/2 cups more water.  Turn up heat 2 notches to medium-low and cook for 1 1/2 more hours or til veggies are tender.

Shepherd's Pie

2 lbs. Ground Beef
2 Cans corn or green beans
1 package turkey or brown gravy
4-5 cups mashed potatoes
1/2 c. onion, chopped
1 cup cheddar cheese
salt and pepper
paprika

Prepare potatoes, whip with butter and milk.  Brown meat and onion in skillet, and season with salt and pepper. Drain fat. Meanwhile prepare gravy according to directions on package add to meat.  Place in the bottom of a 13*9 pan, and layer with drained veggies, top with potatoes.  Sprinkle with cheddar cheese and paprika and bake at 350* for 30 minutes

Oven Pot Roast


1/2 cup flour
Pepper to taste
2 Tbls. Montreal Steak Seasoning
3 1/2 pound rump roast
1/4 cup butter
1 envelope onion soup mix
1 can cream of mushroom soup
3/4 cup water

Pre heat oven to 325*. Mix flour, pepper and steak seasoning in large bowl. Dredge the rump roast in the flour mixture, coating evenly, discard extra. In a large skillet, melt butter and brown roast on all sides. Place roast in a 3 quart casserole dish. In a small bowl combine onion soup mix, soup and water, pour over top of roast. Cover and bake for 3 hours.
This comes out super moist as it bakes in it's own gravy.

Crockpot Beef Roast

3-4 lb. beef roast
1 1/2 pounds baby carrots
7 potatoes, peeled and quartered
1 package onion soup mix
3 cans swanson chicken or beef broth

Prepare beef by removing most visible fat from exterior. Place vegetables in the bottom of crockpot, add beef. Salt and pepper the top of roast and sprinke on the onion soup mix. Pour broth around roast. Cook for 6 hours on High. (I turn meat over 4 hours in) Remove vegetables and meat, slice and serve with creamy horseradish. I also make a gravy out of the left over sauce by simply pouring into fry pan whisking in wondra flour bring to a boil until it thickens.

Matt's Chili

3 c. dry red beans
3 c. dry black beans
3 c. dry pinto beans
2 lbs. hamburger
2 cans corn
28 oz can tomatoes
28 oz can crushed tomatoes
1 -15 oz can Italian stewed tomatoes
1-15 oz can diced peeled tomatoes
1-29 oz can tomato sauce
3 c. chicken broth
4 c. cooked rice
1 1/2 c. freeze dried green peppers
2 large onions, chopped
6 cloves crushed garlic
1 1/2 tsp. pepper
2 Tbls. chili powder
2 tsp. basil
1 tsp. oregano

Soak all beans overnight in large dutch oven pot. cook beans til tender. Cook meat, onion, and garlic. Add remaining ingredients and cook down til thickened.

Super Easy Quick Chili

2 lb. hamburger
1 lg. onion, chopped
4 cloves garlic, minced (or almost 4 tsp.)
2 -15 oz. cans kidney beans
1 -15oz. can chili kidney beans
1 -15 oz. can tomato sauce
2 -15 oz. cans diced tomatoes
2 packages mild chili powder

In pot cook meat, onion, and garlic til browned. Add remaining ingredients, and cook down til thickened about 1 hour.

Meatballs

2 lb.s ground beef
1/4 C. finely chopped onion
2 eggs
1 C. dry Italian bread crumbs
1/2 Tbls. salt
1 tsp. Worcestershire sauce
1/4 tsp. pepper
1/4 tsp. garlic powder

Mix all ingredients using hands. Shape into 1 inch balls. Place on cookie sheets and bake at 400* for 10-15 minutes turning half way through cooking. Drain, use them hot or cold. May also be frozen until ready to use.

Super Easy Beef Enchiladas

2 lbs ground beef
1 large onion
1-10 oz can cream of chicken soup
1-10 oz can cream of mushroom soup
1-10 oz can enchilada sauce
1 lb. grated cheddar cheese
15 corn tortillas-quartered

Preheat oven to 350. Cook beeef and onion in skillet. Add soups and sauce to beef. Greasse a 13*9 pan, layer tortillas, beef, and cheese like a lasagna. Cook for 35-45 minutes.

Sweet Sloppy Joes

2 lbs ground beef
1/2 onion
1/2 green bell pepper
2 tsp. worchestershier sauce
1 tsp. garlic salt
1/2 tsp. chili powder
2 tsp. yellow mustard
2 cups ketchup
14 cup water
1/4 c. plus 2 Tbls. brown sugar
1/2 tsp. salt
1/4 tsp. pepper

brown meat, onion and pepper. Drain off the fat. Add remaining ingredients, simmer on med-low for 1/2 hour. serve over buns.
These are a sweet sloppy joe cause that's the way we like em' uh huh uh huh uh huh
