Apple Fritter Rings

  • 4 large apples
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 large eggbeaten
  • 1 teaspoon vanilla
  • 3/4 cup whole milk

  • 1/3 cup granulated sugar
  • 2 teaspoons cinnamon

Line a baking sheet with paper towels; set aside.Slice the apples into 1/4-inch-thick rounds. Remove and discard the center core of each slice with a tiny cookie cutter or apple corer. Pat the slices dry.In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. Add in the egg, vanilla, and buttermilk; stir until just combined and thick.Add about 2 inches of oil to a large heavy-bottomed pan set over medium heat, until it reaches 350 degrees F.Dip each apple ring into the batter, shaking off any excess. Carefully lower the ring into the oil. Fry 3 to 4 rings at a time without them touching, for about 1 to 2 minutes per side, or until golden, regulating the heat at 350F in between batches.Using tongs, transfer them to the paper towels.Repeat the process with the remaining apple slices.While still warm, coat them with the cinnamon-sugar mixture.

Pumpkin Cinnamon Rolls

3 1/2 C. flour
1/4 C. sugar
1 1/2 tsp. sea salt
3/4 C. milk
1 egg
1 C. pumpkin puree
4 Tbls. butter
2 1/4 tsp, instant yeast + 1/3 C. warm water + 1 tsp. honey
1 C. heavy cream

FILLING
1/2 C. brown sugar
2 tsp. ground cinnamon
4 Tbls. butter, melted for brushing dough

FROSTING
1/4 C. maple syrup
2 C. Powdered Sugar
2 oz. cream cheese, softened
1/2 C. milk

Warm milk and butter for about 2 minutes in the microwave, let cool slightly.  In a mixing bowl combine warm milk, sugar, yeast, egg, and pumpkin.  Mix well.  Add flour and salt.  Using a Kitchen aid with dough hood knead 5-8 minutes until dough becomes smooth and elastic.  Place dough in a large, buttered bowl, cover with plastic and a towel and let rise at room temperature until doubled.  Preheat oven to 350*. Butter a 9*13 pan, on a lightly floured surface roll dough into a 14*12-inch rectangle.  Brush with melted butter.  Mix cinnamon, sugar, sprinkle evenly over dough.  Roll tightly from the long side, then cut into 9 even rolls. Place rolls in buttered dish. Cover with plastic wrap and let double again.  Pour the heavy cream around the rolls right before baking.  Bake for 35 minutes, or until golden.  Remove from oven and let cool slightly.  Make frosting by whisking together maple syrup, powdered sugar, cream cheese and milk until smooth.  Spread on top and enjoy.

Carrot Cake Brownie Bars

1/2 C. brown sugar, packed
1/3 C. granulated sugar
4 oz. plain Greek yogurt
8 Tbls. butter, melted
1 egg
1 1/2 C. shredded carrots 
1 1/4 C. flour
1/8 tsp. nutmeg
1/8 tsp. allspice
1 tsp. cinnamon
1/2 tsp. salt

Cream Cheese Ingredients
8 oz. cream cheese, room temp
1 tsp. vanilla
1/3 C. granulated sugar

Preheat oven to 350*. Spray a 9-inch pan. In a small bowl microwave cream cheese for 45 seconds, add vanilla and sugar and blend, set aside.  In a large bowl add both sugars, butter, egg, yogurt and vanilla.  Add the dry ingredients and mix until smooth.  Fold in carrots pour into dish. Add the cream cheese in dallops on top, and swirl with a knife.  Bake for 40-45 minutes.  Allow to cool.

Almond roca

 1 lb. butter
2 cups sugar
2-3 c. chocolate chips
slivered almonds.


mix in pot, stir constantly over medium heat  til soft ball stage (it will turn slightly brown and take about 15 minutes) Put a piece of parchment paper on a cookie sheet, pour mixture over top.    Dump chocolate chips over the top and spread til smooth, and sprinkle with slivered almonds.  Let cool and break into pieces.

Frosted Pumpkin Chocolate Chip Snickerdoodles
















1 Cup Butter, softened
1 1/2 Cup Brown Sugar Packed
1/2 Cup Sugar
2/3 Cup Pumpkin Puree
2 Eggs
2 tsp. vanilla
4 C. Flour
2 tsp. corn starch
2 tsp cinnamon
2 tsp. pumpkin pie spice
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 cups chocolate chips
*4 Tbls sugar + 2 tsp. cinnamon for Rolling

Frosting:
4 Tbls. Cream Cheese
1 tsp. vanilla
2-4 Tbls milk (until desired consistency)
1 1/2 Cups powdered sugar
Mix with hand mixer, place in a ziplock bag, cut corner and drizzle onto cooled cookies
 
In a medium sized bowl, whisk together the softened butter, brown sugar, white sugar, pumpkin, egg and vanilla extract. 
In a large bowl, whisk together the dry ingredients. Fold the dry ingredients into the wet ingredients. 
Fold in chocolate chips. Chill cookie dough batter for 30 minutes.
Preheat the oven to 400°F. Roll the dough into large tablespoon size balls.  Mix together the sugar and cinnamon and roll each cookie dough ball in the cinnamon-sugar mixture.
Arrange the cookies on baking sheets, and slightly press down with a jar.
Bake for 8 minutes. Cookies will look very soft when you take them out.
Let them rest on the cookie sheet for 2-3 minutes, reroll the tops in sugar/cinnamon mixture and transfer to a cooling rack.  Makes 48 Cookies.

Gingerbread cookies

• 2 1/4 cups all-purpose flour
  1. • 2 teaspoons ground ginger
  2. • 1 teaspoon baking soda
  3. • 3/4 teaspoon ground cinnamon
  4. • 1/2 teaspoon ground cloves
  5. • 1/4 teaspoon salt
  6. • 3/4 cup butter, softened
  7. • 1 cup white sugar
  8. • 1 egg
  9. • 1 tablespoon water
  10. • 1/4 cup molasses
  11. • 4 tablespoons white sugar

Preheat oven to 350F.
  1. Mix together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  2. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy.
  3. Beat in the egg, then stir in the water and molasses.
  4. Gradually stir the sifted ingredients into the molasses mixture.
  5. Shape the dough into walnut sized balls, and roll them in the remaining 4 tablespoons of sugar.
  6. Place the cookies 2 inches apart on an ungreased cookie sheet. You don't need to flatten them.
  7. Bake for 10-12 minutes in the preheated oven.
  8. Allow cookies to cool on the cookie sheet for 5 minutes before removing to a wire rack to cool completely.
  9. Makes approximately 30 cookies. Store in an airtight container.

Gingerbread cake

  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1 egg
  • 1 cup molasses
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 cup hot water
  1. Preheat oven to 350 degrees. Greased and flour (important!) one 9 inch square pan. 
  2. Cream together the sugar and butter. Add egg, and beat well. Mix in the molasses. 
  3. Whisk together the flour, baking soda, salt, cinnamon, ginger and clove. Add dry ingredients to the creamed mixture; add the hot water, and mix well. 
  4. Pour batter into pan and bake for one hour, more or less. Start checking with a toothpick in the centre around 50 minutes. The top tends to darken quickly, so I always put a piece of foil tented over the top during baking. Allow to cool in pan and serve with whipped cream.

6 minute caramels

would be great for making caramel apples
Ingredients:
1/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup light Karo syrup
1/2 cup sweetened condensed milk

Directions:
1. Combine all ingredients in heavy sauce pan.
2. Cook 6 minutes oven medium heat, stirring every two minutes.
3. Stir and pour into lightly greased dish.
4. Let cool.
5. Cut, wrap in wax paper & store in an air tight container

Julies Christmas Brittle

15 grahm cracker
1 cup butter
1 cup brown sugar
12 ounces chocolate chips
optional : chopped nuts or peppermint sticks

melt butter in microwave. Stir in sugar. Microwave for three more minutes stirring halfway through. Line a cookie sheet with aluminum foil, spray. Line cookie sheet with graham crackers. Poor butter on top of graham crackers. Cook at 350° for 10 minutes, after 10 minutes remove from oven. Spread out chocolate chips and cook for one minute more.  Spread chocolate with knife and sprinkle with either nuts or candy canes. Freeze for 15 to 20 minutes and then break apart and enjoy your Christmas Brittle.

Cranberry Orange Bundt Cake

Cake
2 3/4 cups cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1 tablespoon grated orange zest
1/4 cup orange juice
1 teaspoon vanilla extract
1 cup unsalted butter, soften
2 cups sugar
4 large eggs
1 cup dried cranberries
Orange Glaze
2 cups powdered sugar
3 to 4 tablespoons orange juice

heat oven to 350F. Generously grease and flour a 10-inch bundt pan.
In a large bowl, sift the flour, baking powder, baking soda and salt.
In another bowl, whisk sour cream, orange zest, juice and vanilla.
Beat butter and sugar together on medium speed in a bowl of a standing mixer until light and fluffy. Beat in eggs, one at a time, until blended.
Reduce the speed to low and beat in 1/3 of the flour mixture, followed by half of the sour cream mixture. Repeat with another 1/3 of the flour mixture and the remaining sour cream mixture. Beat in the remaining flour mixture until just incorporated.
Fold in dried cranberries.
Pour the mixture into the prepared bundt cake pan and spread evenly.
Bake for 40 to 50 minutes or until wooden pick inserted in cake comes out clean. Cool in pan on wire rack for about 10 minutes before inverting on rack. Let cool completely.
To make the orange glaze, whisk together powdered sugar and orange juice, a tablespoon at a time, until it becomes thick and smooth. Pour over cake.

Peppermint Patties

  • 1/4 cup softened butter
  • 1/3 cup light corn syrup
  • 1-2 tsp peppermint extract*
  • 3 cups powdered sugar
  • 2 cups dark dipping chocolate**
  • chocolate jimmies, if desired
  1. Combine butter, corn syrup, extract and powdered sugar in a mixing bowl. Mix with an electric mixer for about 3 minutes, until ingredients are well combined and are holding together.
  2. Remove dough from bowl and break off about 2 teaspoon-sized sections. Roll into a ball and gently flatten with your hands. Put patties down on a pan lined with wax or parchment paper. Once all patties are made, place pan in the freezer for 10-15 minutes.
  3. Melt chocolate in microwave for 1 minute 20 seconds. Let sit for an additional minute in the microwave. Remove and gently stir. Remove peppermint patties from freezer. Use a fork or a handy Winton Dipping tool like I did to dip each patty in the chocolate, flip to coat the other side, then tap to remove any excess. Transfer chocolate coated patties to wax paper to cool. Top with chocolate jimmies if you’d like.
  4. Store in an airtight container, refrigerate if preferred but it’s not necessary. Yields 40 mints.

Salted Pretzel Toffee


3 Cups salted mini pretzels, chopped
1 C. salted butter
1 C. white sugar
2 Tbls. water
1/8 tsp. salt
2 tsp. vanilla
8 oz. semi sweet chocolate chips
1/2 C. pecans or walnuts, chopped

Line a 15*10 inch pan with parchment paper.  line the bottom of the pan with pretzels in an even layer.  Cook the butter, sugar, water and salt over medium heat until the temperature reaches 305*, this takes about 10 minutes. stirring frequently.  Stir in the vanilla, and pour the mixture over the pretzels.  spreading evenly and quickly as it hardens quick.  Immediately layer chocolate chips on top.  and let sit for a few minutes.  When melty, spread evenly over toffee.   Top with nuts or sprinkles.  Cool completely, I place it in the fridge for about a half hour.  using a sharp knife cut into chunks.

Christmas Popcorn


2 packages popcorn, popped
3 Cups Rice Krispies
2 Cups honey roasted peanuts
24 oz.  vanilla almond bark
4 Tbls. peanut butter

Pop two packs of popcorn and put into a Turkey Roaster Size pan. Add rice Krispeis and peanuts. In a Microwave, mel  Almond Bark ( 30 second increments til melted) remove and add 3 tablespoons peanut butter. pour over popcorn and stir to cover the mixture. Line a cookie sheet with parchment paper and Layout popcorn to dry. Store in sealed container for freshness.

Candy Bar Chocolate Caramel Pie


1 Chocolate Grahm Cracker Crust

35  Kraft Caramels
1/4 Cup Milk
1 Tbls. Butter
(or replace milk and butter with 1/4 c. half and half)
1 Cup Chopped Toasted pecans

1 bar of Hersheys chocolate
2/3 C. Semi Sweet chocolate chips
(you want about 5.5 ounces of chocolate total)
1/4 C. milk or whipping cream

Cook Crust for 10 minutes at 300*. Allow to cool. Melt Caramels with milk and butter. Add pecans and pour into crust, refrigerate about 1/2 hour. In microwave melt chocolates. With a whip add in milk Spread onto caramel mixture and refrigerate until set. You'll want to let this pie sit out about 10-15 minutes before cutting into.

This is like a candy bar it's so very rich. Indulge yourself around the holidays or anytime you need a quick chocolate fix, Small pieces are best. Oh so yummy!

Popcorn Balls

A little more than 3/4 cup unpopped kernels (you want an over flowing 2 gallons popped)
1/2 tsp. salt
3/4 c. light corn syrup
2 tsp. cold water
2 c. confectioners sugar
1 c. mini marshmallows
1/4 c. margarine
2 tsp. vanilla

In a saucepan over medium heat, combine the corn syrup, salt, margarine, cold water, confectioners' sugar and marshmallows. Heat and stir until the mixture comes to a boil, boil rapidly for 1 minute (no more). Add vanilla at the end. place about 1 gallon popcorn in a very large bowl, Carefully combine the hot mixture with the popcorn, stirring with a wooden spoon, continue adding the other gallon of popcorn coating each kernel. Lay out some sheets of waxed paper... Spray hands with Pam and quickly make 14-18 piles of popcorn on the waxed paper (for me it's both hands cupped of popcorn each) the piles will be loose at first, as soon as you have your 14-18 piles go back and reshape into tight balls. Wrap with plastic wrap and store at room temperature.
Makes 14- 18 balls

Perfect Pumpkin Pie

1 -9 inch unbaked pastry shell
1 -15 ounce can pumpkin
1 -14 oz. can sweetened condensed milk
2 eggs
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

Crust (homemade or bought)


Preheat oven to 425*. Beat pumpkin, milk, eggs, spices and salt. Pour into crust. Bake 15 minutes. Reduce oven to 350* and bake an additional 35-40 minutes. Cool, serve with whipped cream and enjoy!

Pumpkin Bars

4 eggs
1/2 c. vegetable oil
1/2 c. apple sauce
2 c. sugar
1 -15 oz. can pumpkin
2 c. flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves

FROSTING
4 oz. cream cheese
3 Tbls. soft butter
1 tsp. vanilla
2 1/4 c. powdered sugar

Preheat oven to 350*. Combine first 5 ingredients. using a wire whisk, mix flour, powder, soda,salt and spices. Add to pumpkin mixture, mix well. Pour into floured and greased 15*10 pan. Bake for 25 minutes (if doubling the recipe bake 2 pans for 37 min). Cool and frost. Cut into bars

Peanut Butter Balls

2 -2 1/2 lbs. powdered sugar
2 sticks soft margarine
1 can eagle condensed milk
1 1/2 -2 c. peanut butter
2 packages chocolate chips
shaved parafin wax

Mix using hands or Bosch. Roll into 1 inch balls, chill at least 1 hour. Melt chocolate and small amount of parafin wax over double boiler. Dip balls into chocolate using toothpicks. Place on wax paper to cool. Keep refrigerated after being made.

Praline Sweet Potato Souffle

2 - 40 oz. cans sweet potatoes, drained
2 eggs
1 tsp. salt
1/2 c. sugar
1 tsp. vanilla
1/2 c. milk
1 stick butter

TOPPING
3/4 c. brown sugar
1/3 c. flour
1 c. chopped pecans
1 c. shredded coconut
1/3 c. margarine, melted

Heat oven to 325. Combine yams, eggs, salt, sugar, vanilla, milk, and margarine. Blend with mixer until smooth and pour int o a 9 *13 pan. Prepare topping by combining brown sugar, pecans, flour, coconut and margarine. Sprinkle over potatoes. Bake for 45 minutes at 325*

This is almost a dessert it's so good. We only make this for Thanksgiving and Christmas dinner, but it's a well loved family favorite.
