Rib Rub

1 tsp. chili powder
1 tsp. paprika
1/2 tsp. cayenne pepper
2 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tsp. onion salt
1 tsp. Smoky lime Wing rub (Wing Magic)
4 Tbls. brown sugar

Combine all ingredients in a bowl and rub on both sides of a rack of rib.

Beef Stroganoff - Dianna Whitmer

1 1/2 lbs. stew meat or hamburger
3 Tbsp. oil
1 1/2 C. thinly sliced onion
1 1/2 tsp salt
1 tsp. dry mustard
1 C. water
1 glove minced garlic
4 oz. can mushrooms
1 t. Worcestershire sauce
2 Tbls. flour
1/4 tsp. pepper
1 tsp. beef boullion
1/2 pint sour cream

Cut meat into small pieces, brown in oil.  add onion, garlic, and cook until onion is clear.  Add mushrooms and cook lightly.  Stir in flour, salt, mustard, pepper.  add bullion, water and worcestershire sauce.  stir to blend.  Cover and cook slowly until meat is tender.  Stir in sour cream.  Serve over hot noodles or rice.

Ribs with a Kick

BBQ Sauce
2 medium onions, chopped
2 cloves garlic, minced
2 Tbls. butter
1 C. packed brown sugar
1 C. water
1 C. Ketchup
3 Tbls. white vinegar
1/2 tsp. Worcestershire sauce
2 tsp. ground mustard
2 tsp. chili powder
1 tsp. paprika
1/2-1 tsp. cayenne pepper (depending on level of heat desired)

Rub
2 tsp. salt
1 tsp. onion salt
1 tsp. garlic salt
1 tsp. pepper
6 pounds pork ribs (baby backs are great)

*In a saucepan saute onion and garlic in butter til tender. Stir in remaining sauce ingredients. Bring to a boil, reduce heat and simmer 1/2 hour.  Remove from heat.
*Pull of the membranes from ribs.
*In a Small bowl combing rub ingredients and rub into both sides of the ribs.
*Wrap in Foil, place on grill on medium/low for 1 1/2 hours (check after 1 hour) smother in sauce, cook for 20-25 more minutes.  serve with remaining sauce.

Shepherd's Pie

2 lbs. Ground Beef
2 Cans corn or green beans
1 package turkey or brown gravy
4-5 cups mashed potatoes
1/2 c. onion, chopped
1 cup cheddar cheese
salt and pepper
paprika

Prepare potatoes, whip with butter and milk.  Brown meat and onion in skillet, and season with salt and pepper. Drain fat. Meanwhile prepare gravy according to directions on package add to meat.  Place in the bottom of a 13*9 pan, and layer with drained veggies, top with potatoes.  Sprinkle with cheddar cheese and paprika and bake at 350* for 30 minutes

Meat Loaf


2 eggs
3/4 cup milk
1 cup italian style bread crumbs
1/2 of an onion, chopped
2 Tbls. dry parsley
1 tsp. salt
1/2 tsp. basil
1 1/2 pounds hamburger

1/4- 1/2 cup ketchup
1/4 cup honey bbq sauce
3 Tbls. brown sugar
1 tsp. mustard

Mix first 8 ingredients and pat into a casserole dish...we like ours about 2 inches deep.  Mix topping and spread ontop.  Bake in a 350 degree oven uncovered for 1 to 1 hour 15 minutes.
