Auntie Annies Pretzels (copy cat)

 Pretzel Dough
3 cup warm water
1 Tbls. yeast
4 tablespoons brown sugar
2 1/4 teaspoon salt
2 cup bread flour
6 cups regular flour
Water Bath
8 cups warm water
8 tablespoons baking soda
Toppings
coarse salt
melted sweet cream butter
In a mixing bowl add yeast, brown sugar, and salt.  Add in the warm water and let it bloom about 10 minutes.  Add in the flours while stirring until it forms a soft dough. Turn the dough out onto a floured surface and knead until smooth and elastic. Place back in the bowl and cover with a damp towel. Let rise for 1 hour.

While the dough is rising, prepare the water bath by mixing the warm water and baking soda. Stir well, bring to a boil.

Preheat the oven to 450 degrees F. Grease a baking sheet.

When the dough has risen, pinch off pieces of the dough and roll out into a long rope. Shape into a pretzel shapes. Dip the pretzel in the boiling baking soda solution about 20-30 seconds and place on the prepared baking sheet. Repeat with remaining dough.

Place the baking sheet in the oven and bake at 450 degrees F for 10 minutes or until golden brown.

Remove the pretzels from the oven and brush with melted butter. Sprinkle the hot pretzels with the coarse salt, or sprinkle with cinnamon sugar mix.

Parker House Rolls

1 1/2 C. Hot water
2 Tbls. Yeast
1/2 C. sugar
1/2 C. oil
2 tsp. salt
2 eggs
4 1/2 C. flour

Mix water, yeast, sugar, and salt until all is dissolved. Stir in oil, eggs and 1/2 the flour.  Stir in remaining ingredients, and mix well. scrape bowl, cover with a towel and let rise.  Punch dough down, scrape sides of bowls, cover and let rise until double again.  Roll out 1/2 inch thick on floured surface, cut into circles using glass, fold circles in half and pinch together to seal, place in creased pan, let rise 30 minutes.  Bake at 350* for 15 minutes.

Dads Donuts

2 Tbls. yeast
1/3 cup water warmed
1 1/2 cup milk
1/2 cup sugar
1 teaspoon salt
2 eggs
1/3 cup shortening (or butter)
5 cups flour
oil for frying

CHOCOLATE GLAZE
4 ounces semi-sweet chocolate
3 tablespoons butter
1 1/2 cups powdered sugar
3 tablespoons hot water
*Melt chocolate and butter in microwave. Add powdered sugar and hot water. Blend till smooth

VANILLA GLAZE
1/2 cup butter melted
2 cups powdered sugar
2 teaspoons vanilla
5 to 7 tablespoons evaporated milk
*Mix all ingredients and glaze donuts.

MAPLE GLAZE
1/4 C. butter
1/2 c. brown sugar
3 Tbls. milk
1 Tbls. corn syrup
2 tsp. maple extract
2 C. powdered sugar
*In a saucepan combine butter and brown sugar, whisk in milk and heat for about 5 minutes on medium heat.  Remove from heat and add in corn syrup and maple extract.  Add in powdered sugar, whisking until smooth.  

DIRECTIONS
*In a mixer combine warm water and yeast, let dissolve for five minutes.
*In microwave bowl, heat milk for two minutes remove and let cool.
*Add milk, sugar, salt, eggs, shortening and 2 cups flour to the bowl of yeast. Mix for two minutes at medium speed.
*Add the remaining 3 cups of flour and continue mixing dough. Scraping down the sides.
*Place dough in a large, greased bowl. Cover and let rise for 1 to 2 hours or till doubled.
*Roll out onto a floured surface about 1/4 inch thick. Cut into donuts and donut holes. Place on cookie sheet lined with silpat or parchment paper. Let stand about 15 minutes.
*Carefully drop donuts into hot oil a few at a time. Turn once for about three minutes or until golden brown, drain on paper towels.  Frost with desired glazes, cinnamon sugar or powdered sugar.

Pretzels with Cheese Sauce

Pretzels
3 C. warm water
2 Tbls. sugar
2 Tbls. salt
3 Tbls. yeast
9 C. flour
4 Tbls. oil

Water bath
8 cups water
2/3 cups baking soda

Egg Wash
1 large egg
1 Tbls water
sea salt for topping

Cheese Sauce
1 stick of butter
1/4 c. flour
2 cups milk
8 oz. shredded cheddar cheese
1/2 cup salsa Verde (optional)
salt and pepper to taste.


Mix in a large bowl the water, sugar, salt and yeast.  Let it activate about 10 minutes.  Add in the flour and oil, mix with hands about 5 minutes.  Let rest for 1 hour covered.  Dump dough out and cut into 15 slices, Roll into Tubes, and then shape like pretzels.  Meanwhile, in a stockpot, boil 2/3 C. baking soda and 8 c. of water.  Boil dough flipping, then remove and place on silpat.  Brush with egg wash and sea salt. Bake at 450* for 10-15 minutes.  

To make cheese sauce, melt butter in a pan, add flour to make a roux, add milk all at once, stirring until thickened, add cheese and melt.  Add salsa salt and pepper.
Serve Pretzels with cheese sauce.

Gooma's White & Fry Bread

Gooma is the nickname for my mother, one of my favorite memories is coming home to fresh baked bread, pour some honey and butter on a thick slice and I'm a happy girl.  After years of coming home to this treat I never did get my hands down and dirty and learn how to make her bread, it wasn't until she came up just 2 summers ago at the age of 40 that I watched her do a dash here and there with the ingredients when I said "Mom, stop and let me actually measure what your doing so I can have your recipe"...here is what we got.  This recipe is SOOO fast rising I love it, and I have since converted to using it for multitude of things from the crust of pizza, to fry dough, to rolls, cinnamon rolls and than the good ol' loaf of white bread my kids can now enjoy, it's pretty versatile.


1 stick butter
3 C. water
1 C. milk
1/2 C. sugar
2 Tbls sea salt

1/2 C. warm tap water
3 Tbls. yeast, mounded
1 Tbls. sugar
12 - 12 1/2 C. flour

In microwave glass bowl, put 1 stick of butter, 4 c. water, salt, powdered milk and 1/2 c. sugar.  Stir, and microwave for 3 minutes.

In separate small bowl add 1/2 c. warm tap water, yeast and 1 Tbls. sugar.  Stir, let activate for a few minutes.

Pour hot liquid from microwave into Bosch.  Add 4 C. flour, turn  on and stir for about a  minute. Slowly add 3 More cups of flour, mix, and than add activated yeast mixture.  On level 2 stir for about 4 minutes.  Add 5- 5 1/2 cups more flour.  Stir 4 more minutes on level 3.

Pour dough into sprayed bowl.  Let rise punch down,If making bread put into 4 greased pans,  let rise again. Bake at 375* for about 25 minutes or til sounds hollow when tapped.  If making fry dough, punch down, let rise again, take small flat pieces and fry in hot oil - serve with butter, jelly, and powdered sugar.  When I make rolls I cut the dough into four equal portions and then roll those portions into a 14 inch circle, butter the circles and cut into 12 equal parts and then roll from the big end in. Place onto buttered cookie sheets,  5 deep and 4 long-, Makes 48 rolls-bake at 375 for 15 minutes, butter tops.

Bread Bowls

2 Cups + 4 Tbls Warm Water
5 1/2 tsp active dry yeast
1/2 C. butter, melted
2 Tbls sugar
3 tsp. salt
6 1/2 C. flour

Using a Bosch  add warm water and sprinkle in yeast. Let dissolve for a few minutes until yeast becomes foamy.  Add melted butter, sugar, and salt and mix until combined Gradually add four. Once combined, turn mixer on to kneed dough for 5 minutes. Divided dough into 7 equal sized balls. Place on greased cookie sheets and let rise until doubled.  Preheat oven to 425* and bake for 18-20 minutes, or until golden. Let cool. Cut circle in top and remove some of the bread. Fill with favorite soup.

Fry Bread


2 C. Warm water
2/3 C. dry milk
3 Tbls. yeast
1/2 C. sugar
1/3 C. butter
1 1/2 tsp. salt
1 egg
6- 6 1/4 C. flour

Butter
Powdered sugar
Jams

In Bosch, combine water, milk, yeast, sugar and butter.  Let activate for 5 minutes.  Add egg, salt and 2 cups flour. Mix on low til wet. Add remaining flour, mix for 4 minutes on high.  Put into oiled bowl, cover, let rise 1 hour.  Heat oil in skillet on medium heat.  Take a handful of dough and flatten  fry til browned.  Serve warm with butter, powdered sugar and jams.  YUM!

Pizza dough (Calzone)

1/2 cup sugar
4 tsp. Yeast
2 C. Warm Water
4 Tbls. powdered milk
6 Tbls. butter
6 cups flour
2 tsp. salt

Herbs
4 Tbls. melted butter
granulated garlic
Parmesan cheese
parsley

Put sugar, yeast, water and milk in Bosch  let activate for 5-10 minutes.  Add butter, salt and flour and mix on level 3 for 8 minutes. Put dough in sprayed Pam bowl, let rise 1 hour.  Shape into pizzas, and brush butter and herbs around edges.  Let rest 15 minutes.  Spread on Sauce, cheese and toppings.  Bake at 350* for 20-25 minutes or til golden.

Fluffy Cinnamon Rolls (II)



2 CUPS BUTTERMILK (or 2 cups milk with 2 Tbls Lemon juice, sit for 5 minutes)
½ CUP VEGETABLE OIL
½ CUP SUGAR
1 full Tbls DRY ACTIVE YEAST
4½ CUPS ALL PURPOSE FLOUR (DIVIDED)
½ TEASPOON BAKING POWDER
½ TEASPOON BAKING SODA
1½ TEASPOONS SALT

FILLING (mix together 1st 3 ingredients)
1 1/2  Cups packed brown sugar
2 Tbls. Cinnamon
1/2 Cups Pecans, chopped
1/2 cup Butter softened

Mix the buttermilk, vegetable oil and sugar in bowl, place in microwave for 2 minutes, remove and stir in dry yeast. Let this mixture sit for 5-10 minutes to let the yeast activate.

Add 4 (of the 4½ cups) of flour to the buttermilk mixture and stir well (no need to knead, just mix well). Dough at this stage will be extremely sticky. Cover dough with plastic wrap and let it sit in a warm place for an hour. In a small, separate bowl, mix the final ½ cup of flour, baking powder, baking soda and salt.

After the sticky dough has raised for an hour, tap in center, and add the final half cup flour mixture. Mix until well incorporated (I used a wood spoon) Turn batter (which will still be quite soft and sticky) out onto WELL-floured counter and roll/kneed the dough around a few times, coating the surface with flour so it is not so sticky. Roll dough out into a rectangle (about 24" by 13 "). Spread dough surface with softened butter (I do this by hand) then evenly spread on the filling ingredients (pat the nuts into the dough a little). Roll up keeping it as tight as you can. Pinch the seam shut tightly. Cut 24 slices and place into 2 greased 9x13 baking dishes. Cover with plastic wrap and let rise for 30 minutes. Bake in pre-heated 375F oven for about 20 minutes or until golden.  Drizzle with glaze while the rolls are still hot.

MAPLE GLAZE
2 cups powdered sugar
2 teaspoon vanilla extract
½ teaspoon maple extract (I did not add this but will try next time)
2 Tbls. REAL Maple syrup
2-3 tablespoons milk

Matt's Flour Tortillas

2 C. flour
1/4 C. shortening
1/2 tsp. salt
1/2 tsp. baking powder
3/4 C. warm water

blend flour, salt, powder, and shortening.  Add water a little at a time til it's all incorporated.  Form dough into a ball, and kneed on a floured surface until dough is smooth and elastic.  Divide into 12 small balls, cover, let rise 30 minutes. Roll each ball on floured surface to 7" diameter. Place on preheated griddle, cook til medium golden on both sides. Stack between towels to keep warm.

Refrigerator Dinner Rolls

1 C. warm water
2 tsp. sugar
5 tsp. yeast
1/2 C. butter, melted
1/2 C. sugar
3 eggs
1 tsp. salt
4 - 4 1/2 C. flour

*Combine water, yeast and sugar in Bosch   Let rise 5 minutes.  Add butter, eggs, salt and flour.  Blend for 5 minutes.  cover and refrigerate 2 hours-4 days.
*Grease 15*10 pan, turn out dough onto floured surface. Divide in half. Cut into 24 equal pieces. Roll each into a ball, place into pan. Cover, let rise 2 hours or til doubled. Bake at 375* for 15-18 minutes. Brush with butter.

Favorite Cinnamon Rolls

5 1/2 c. flour
2 Tbls yeast
1/2 c. sugar
1 1/2 tsp. salt
1 c. milk
1/4 c. margarine
1/2 c. water
2 eggs

FROSTING
1 lb. powdered sugar
1/4 c. soft butter
6 oz. cream cheese
3 Tbls. milk

FILLING
1/2 c soft butter split
brown sugar
cinnamon
raisins

In Bosch combine 2 cups flour with yeast, sugar and salt. In small bowl combine milk, water, and butter and place in Microwave for 45 seconds or until warm. Add to flour. Add eggs and blend until moistened, mix on (2) for 3 minutes. Add remaining flour and blend for 2-3 more minutes. Cover in greased pan and let rise til doubled. Punch down and divide. On floured surface, Roll each half to a 12*9 rectangle. Brush with butter, sprinkle generously with cinnamon, brown sugar and raisins (I'm talking a good amount of cinnamon and maybe 2 handfuls of sugar per roll). Press this mixture with your hands into dough. Roll up, scrunch in edges to make uniform roll, cut each roll into 12 pieces. Place in greases 13*9 pans, let rise til doubled again. Bake at 375* for 20 minutes. Frost and eat! makes 24

Lion House Dinner Rolls

2 C. warm water
2/3 c. dry milk
2 Tbls. yeast
1/4 c. sugar
2 tsp. salt
1/3 c. butter
1 egg
5 1/2-6 C. flour

In Bosch combine water and milk, mix til dissolved. Add yeast, sugar, butter, egg and 2 cups flour.. Mix on low speed til wet. Add remaining flour, mix for 4 minutes. Put into oiled bowl, cover let rise 1 hour. On floured counter roll out til 18" *8". BRUSH WITH MELTED BUTTER. Cut in half, than cut into 12 strips (making 24 rolls.) roll up dough with butter on the inside. Place into 2 greased 15*10 pans, cover, let rise til doubled. Bake at 375* for 18-25 minutes, or til golden. Brush tops with butter and serve with honey butter.

One of our favorite recipes, I've NEVER screwed this one up.

Yummy Wheat Rolls

2 packages dry yeast
1 3/4 c. warm water
1/2 c. sugar plus 1 Tbls.
1 tsp. salt
1/4 c. butter, melted and cooled
1 egg, beaten
2 1/4 c. whole wheat flour
2 3/4 c. white flour
1/4 c. butter, melted (for tops)

Dissolve yeast in warm water with the one Tbls. sugar for about 10 minutes. Mix in sugar, salt, butter, egg and whole wheat flour. Set Bosch to speed 1 for 30 seconds. Mix in white flour and set speed to 3 for 8 minutes. Place dough in oiled bowl, cover and let rise 2 hours or til doubled. Punch down, let rise 1 more hour. Grease 2 -15*10 pans, squeeze dough through thumb and finger to form 24 perfect balls. Brush with melted butter, let rise til doubled. Bake at 400* for 15 minutes. Brush tops with melted butter.
